Ingredients Used:
* Tomatoes - 2 tomatoes * Sugar - 1 teaspoon * Eggs - 3 * Salt - 1/2 teaspoon * 1/2 cup of minced meat (Pork/ Chicken/ Beef) * Scallions - 2 straws * Garlic - 2 clover * Corn starch - 1 teaspoon * Ginger - 2 slices * Soy sauce - 1 tablespoon * Chicken broth - 1/2 cup

Preparation steps:
* Washed and Cut tomatoes into chunks * Scramble eggs in bowl till fluff * Cut scallions into small dices

Cooking steps:
* Preheat searing or non-stick pan with 2 tablespoon oil ( medium-low heat) * Add eggs and stir cook for a minute (be careful not to overcook egg), take out and put aside * Add another 2 tablespoon oil. Add garlic and ginger to slightly brown. * Add minced meat (I used pork) Stir fry for 2 minutes * Add tomatoes , 1 teaspoon sugar, 1/2 teaspoon salt and stir fry for 2 minutes * Add gravy mix and cook till thickens * Add scrambled eggs and stir mix for 1 minutes. Your are ready to served.
Gravy mix: Mix 1 teaspoon corn starch with 1/2 cup chicken broth and 1 tablespoon soy sauce
