Ingredients Used:
* Bitter Melon - 1 or 2 * Garlic - 2 clover * Salt - 3.5 teaspoon * Ginger - 2 slices * Sugar - 3 teaspoon * Black Bean (optional) * Oyster Sauce - 1 teaspoon * Curl meats (chinese sausage & bacon curl meat) * Chicken broth - 1/2 cup * Corn Starch - 1 teaspoon

Preparation Steps:
* Preboil a pot of water * Cut Curl meat into slices * Cut bitter melon into slices or squares (your preference) * Add 3 teaspoon salt to bitter melon and mix it up for a 1 minute or so. Wash bitter melon afterward. * Add bitter melon to water for 2 - 3 minutes. The will lighten the bitterness of the melon. * Take out and drained. * Combine corn starch and chicken broth for gravy mixed

Cooking Steps:
* Preheat Wok or searing pan with 1 1/2 tablespoon oil * Add Garlic and Ginger to lightly brown * Add Curl meat to stir fry for 3 minutes * Add bitter melons and 3 teaspoon sugar and stir fry for 1 minute * Add Oyster sauce and gravy mixed for another minute. (stir fry evenly) You are ready to served.
