* Wash and decap the crabs (save yolks from crab cap if not keeping) * Scrambe eggs till fluff * Minced pork and mix with soy sauce, oyster sauce, sugar, salt, cooking wine, corn starch
Cooking steps:
* Preheat Wok with 2 1/2 tablespoon oil (high heat) * Add ginger, garlic and few scallions to slightly brown * Add Crabs and mix evenly. Let cook on 1 side for 2 minutes then flip to other for 2 minutes. * Add minced pork and mix evenly for 2 mintues * Add 1/2 cup of water, mix evenly and let cook for another 2 minutes with lid closed (medium flame) * Add egg and mix evenly till cook. * Add rest of scallions and mix evenly for 1 minutes. You are ready to served.
