For 1 - 2 lbs of Silver Fish

Ingredients Used:
* Silver fish * Salt - 1/2 teaspoon * Ginger - 2 slices * Scallion - 2 straws * Garlic - 3 clovers * Soy sauce - 1 tablespoon * Black Pepper - 1 teaspoon * Eggs - 2

Preparation steps:
* Wash silver fish and drain dry with paper towel * Cut 2 slices of Ginger * Cut Scallions into dices * Peel Garlic * Scramble two eggs

Cooking Steps:
* Preheat Wok with oil (olive or vegetable) with high flame. Make sure oil is spread evenly around Wok.
* Spread salt evenly around Wok
* Add Ginger & Garlic and stir fry till lightly brown
* Add Silver fish and spread evenly around Wok (medium heat). You will noticed excess water which is fine. Let it cook without covering for 5 minutes. You need to rotate Wok to get Silver fish evenly crisp. Add another tablespoon of oil, spread evenly over Silver fish. (Low flame)
* Add Black pepper * Add scramble egg and spread evenly over Silver fish for a minute. You are ready to served.
Note: Excess water will dry up fairly quickly and Silver fish will be white indicating that it's done.
