Ingredients Used:

* Beef - 1/2 lbs                         * Soy Sauce - 1 tablespoon
* Bitter melon - 1                      * Oyster sauce - 2 tablespoon
* Ginger - 2 slices                    * Sugar - 1 teaspoon
* Garlic - 2 clovers                    * Salt - 1/2 teaspoon
                                               * Corn starch - 1 1/2 teaspoon
                                               * Cooking wine - 1 tablespoon

Preparation steps:

* Wash and cut bitter melon into slices
* Add 3 tablespoon salt to bitter melon and mixed well together.  Wash bitter melon after 3 minutes. (this will lesson the bitterness of the melon)
* Wash and cut beef into slices.  Mixed with Soy sauce, Oyster sauce, Sugar, Salt, Corn starch, and cooking wine

Cooking steps:

* Preboil pot of water.  Boil bitter melon for 3 minutes to further lessen the bitterness of the melon (this is optional step, if you want taste the full bitterness, skip this step) and drain water.  Set aside.
*  Preheat Wok, searing or non-stick pan with 2 tablespoon oil (high flame)
* Add garlic and ginger to slightly brown
* Add beef and stir fry for 2 minutes
* Add bitter melon, then add additional 2 teaspoon of sugar.  Stir fry for 2 minutes.
* Add gravy mix and let cook for 3 minutes (5 minutes if you skip the preboil phrase)

Gravy mix:  Use bowl for beef mix. Add 1 teaspoon corn starch with 1/2 cup water.
